A Chippendale pub and a brewery office, joined by glass

Tonkin Zulaikha Greer linked the old Clare Hotel pub to the Carlton & United Breweries administration building with a glass walkway. The 62 rooms share a rooftop pool and bar.

No. 03: 25hours Hotel The Olympia

Australia's first 25hours, in the restored West Olympia Theatre

Two room types, Dreamers and Renegades, make up the 109 rooms, and the front desk lends VHS tapes. Mitch Orr oversees the food, from the one-hat Palomar to Monica Rooftop Bar.

Paramount Pictures' Surry Hills offices and film warehouse, now 29 suites

Golden Age Cinema and Paramount Coffee Project are downstairs. Upstairs, under a copper-clad roof, are the plant-filled suites.
